Innover dans les approches ou les concepts permet d’imaginer de nouveaux itinéraires technologiques ou de nouvelles fonctionnalités pour les produits alimentaires. Un travail de synthèse de l’INRA montre comment les concepts de la physique de la matière molle permettent de contrôler les interactions et processus d’assemblages entre protéines, qu’elles soient d’origine animale ou végétale.
